Brown Rice Risotto Recipe from the Amelia Phillips 14 day detox

Brown Rice Risotto Recipe 

Recipe from Amelia's 14 Day Detox Program

 

INGREDIENTS

20g dried porcini mushrooms

15ml extra virgin olive oil, cold pressed

1 brown onion, finely chopped

2 garlic cloves, crushed

250g brown rice

900ml vegetable stock

450g mixed mushrooms, quartered

2 tbsp parsley, chopped

Freshly ground black pepper

METHOD:

1.Placed dried porcini mushrooms in a bowl and cover with 150mls of hot water. Leave to soak for at least 20 minutes, until mushrooms are hydrated.

2.Heat oil in large saucepan, add onion and garlic and cook gently for 5 minutes, stirring. Drain the porcini, reserving the liquid and chop roughly. Add the brown rice to the saucepan and stir to coat in oil.

3.Stir in the vegetable stock and the porcini soaking liquid into the saucepan. Bring to the boil, lower the heat and simmer, uncovered, for about 20 minutes or until most of the liquid has absorbed, stir frequently.

4.Add all the mushrooms, stir well to combine, and cook the risotto for a further 10-15 minutes more until the liquid has been absorbed.

5.Season to taste with freshly ground black pepper and serve at once.

 

HEALTH BENEFITS

Brown rice is a good source of B vitamins, and steadies blood sugar level as it is rich in fibre. It can help to prevent constipation and kidney stones.
